Pumpkin Scones Recipe

Dry ingredients:

2 ½ cups of All-Purpose flour

½ cup brown sugar

1 ½ tsp baking powder

½ tsp cloves

1 tsp cinnamon

½ tsp salt

1 Tbsp + 1 tsp pumpkin pie spice

1 stick (8 Tbsp) cold unsalted butter cut into pieces

Wet Ingredients:

¼ cup heavy cream

1 egg whisked

½ cup pumpkin puree

1 ½ tsp vanilla extract

Cinnamon and brown sugar topping:

3 Tbsp brown sugar

1 tsp cinnamon

Glaze:

1 ½ cup powdered sugar

3-5 Tbsp milk depending on what consistency you prefer

Instructions:

  • Whisk together dry ingredients in a large mixing bowl
  • Add your chopped butter into the dry ingredients and break up the butter chunks with a pastry blender or a fork until you reach a sand-like texture
  • In a separate bowl whisk together the wet ingredients
  • Add the wet ingredients to the dry ingredients and incorporate the wet ingredients with a fork
  • Once the dough forms almost like a shaggy ball, put it on a lightly floured surface and knead for 2 minutes or until the dough is smooth, and shape the dough into a ball (if the dough sticks to your hands while kneading just add more flour to your hands)
  • Flatten out the dough ball until it forms a disk that is about an inch and a half thick and cut the dough into 8 triangles
  • Place the triangles onto a baking sheet lined with parchment paper and brush the triangles with milk and sprinkle on the cinnamon and brown sugar mixture
  • Bake the scones at 350°F for 20-30 minutes or until they are golden brown
  • Once the scones have cooled, drizzle with the glaze and they are ready to enjoy!
